How to reheat creamy pasta

Reheat cream, cheese and chicken pasta gently with the right added liquid, pan heat and microwave method.

Short answer

Use low heat and a small splash of water or milk, stir often and stop as soon as the centre is steaming. Fierce heat drives off water and separates fat.

Cold pasta absorbs sauce, so yesterday's glossy coating often looks like paste. Reheating needs moisture and patience, not another pour of cream.

Some emulsions will never return perfectly. Carbonara and cacio e pepe are quality compromises as leftovers.

Pan method

Place one or two portions in a broad pan with a tablespoon of water per portion. Cover briefly, then stir over low heat until loose and hot.

Microwave method

Use medium power in short bursts, cover loosely and stir between each burst so the cold centre and hot edges catch up.

Know when to stop

Once steaming throughout, remove it. Continued boiling tightens dairy proteins and softens pasta further.
