Pizzoccheri is a short, flat ribbon with straight knife-cut ends. Buckwheat gives the pieces a distinctive grey-brown, speckled appearance.

The protected Valtellina format uses buckwheat flour blended with other flour. Its low-gluten buckwheat component makes it less stretchy than egg sfoglia.

Origin

Pizzoccheri della Valtellina is protected by an IGP specification and belongs to the Alpine food culture of northern Lombardy.

Cooking
