What does al dente mean?

Al dente means firm to the tooth. Pasta should be cooked through but retain a gentle bite at its centre, especially when it will finish in hot sauce.
Al dente is a texture, not a timer. Packet directions are useful, but pot size, altitude and the violence of the boil all affect the result.
Taste the pasta. Cutting it open can help while learning, but your teeth give the final answer.
Stop early for pan finishing
Move pasta into sauce 1–3 minutes before it is ready. It continues absorbing liquid while the sauce works into its surface.
Bakes need an even earlier stop
Pasta destined for the oven should be several minutes underdone. It will continue cooking in sauce and steam beneath the cheese top.
