Sauce Rescue

How to Rescue Oily Pasta Sauce

Fix visible oil in pasta sauce using starch, water and agitation, with separate advice for olive-oil, meat-fat and cheese sauces.

What you can do now

Add a tablespoon of hot starchy water and toss firmly over moderate heat. Repeat only if needed until the oil breaks into a glossy coating.

01

What went wrong?

Fat was added faster than water and starch could bind it.

The sauce lacked agitation.

Cheese overheated and released its fat.

02

Why it happened

A stable sauce disperses tiny fat droplets through water. When the droplets join, the oil becomes visible and the coating feels greasy.

03

What you can do now

  • For oil sauces, use hot starch and vigorous tossing.
  • For cheese sauces, cool first before adding liquid.
  • Spoon off truly excessive rendered fat before rebuilding.
04

How to prevent it next time

  • Reserve concentrated pasta water.
  • Add oil or butter gradually.
  • Match fat quantity to the pasta amount.
