Pasta water and emulsification
Understand how starch, fat, water, heat and agitation create a glossy sauce that clings to pasta rather than splitting.
A little starchy cooking water, added while pasta is tossed with fat over controlled heat, helps create and stabilise tiny droplets that make sauce cohesive and glossy.
An emulsion is one liquid dispersed through another that normally resists it. In pasta sauce, water and fat are persuaded into a temporary, delicious agreement.
Starch helps, but technique does the work: proportion, temperature and energetic movement decide whether the sauce coats or separates.
What the starch contributes
Cooking releases starch from pasta into the water. That starch increases viscosity and slows droplets from colliding and separating. Low-water cooking can concentrate it, but a normal pot still provides useful liquid.
Heat and agitation
Tossing or stirring breaks fat into smaller droplets and distributes them. Moderate heat keeps the sauce fluid; fierce heat can evaporate water too quickly or seize cheese proteins.
Build the texture gradually
Transfer pasta into its sauce before full doneness. Add cooking water by spoonfuls while tossing, then judge the moving sauce: it should look slightly looser in the pan than on the plate because it tightens as it cools.
Cheese sauces need restraint
For cacio e pepe and related sauces, take the pan off high heat before adding finely grated cheese. Very hot water tightens proteins into strings and clumps before they can disperse.
