Why Is My Cheese Sauce Grainy?
Fix a grainy pasta cheese sauce and understand how high heat, pre-grated cheese and rushed melting cause proteins to clump.
Take the pan off the heat. Add warm milk or pasta water a spoonful at a time and whisk firmly. If small grains remain, blend briefly before the sauce cools.
What went wrong?
The cheese met boiling liquid.
Pre-grated cheese brought anti-caking powder.
A large handful was added at once.
Why it happened
Aged cheese contains proteins that tighten and cluster under excessive heat. Once they gather, fat separates and the sauce loses its smooth suspension.
What you can do now
- Remove all direct heat.
- Dilute gradually with warm liquid, not cold liquid in one flood.
- Whisk or blend to break smaller aggregates. Large rubbery clumps may not fully recover.
How to prevent it next time
- Grate cheese finely from a block.
- Let the sauce stop bubbling before adding cheese.
- Add small amounts while stirring.
