How to Fix a Broken Cream Sauce

Bring a split pasta cream sauce back together with lower heat, gradual liquid and patient stirring, then prevent the same failure next time.

What you can do now

Take the pan off heat and whisk in a spoonful of warm water or cream. If it stays split, transfer a small portion to a clean bowl, emulsify it, then whisk the rest in gradually.

Why it happened

Cream is already an emulsion. Excess heat, concentrated acid or poorly melted cheese can destabilise it and let fat separate from water.
