Pasta meal prep that stays good

Plan sauces, bakes, salads and component prep so weekday pasta keeps its texture and reheats safely.

Short answer

Meal-prep the sauce whenever possible and cook pasta fresh. When assembling portions, keep pasta firm, add enough sauce, cool promptly and choose dishes that tolerate reheating.

Pasta continues absorbing liquid in the fridge. The best meal-prep dishes account for that rather than hoping Monday's texture survives until Thursday.

Tomato ragù, lentil sauce and sturdy bakes are dependable. Fragile cheese emulsions and fresh pesto are poor candidates for repeated reheating.

Prep components, not disappointment

Freeze sauce in meal-size containers, portion grated cheese and wash sturdy vegetables. Cooking pasta on the day often takes less time than repairing a dry box.

For complete portions

Drain pasta a little firm, coat thoroughly, cool in shallow containers and refrigerate promptly. Pack garnishes separately.

Cold lunches

Choose short shapes and dress in stages. Keep dairy and chicken salads cold during transport.
