How to prepare pasta for baked dishes
Prevent dry edges, mushy centres and watery layers by undercooking pasta, balancing sauce and resting baked pasta properly.
Drain dried pasta about three minutes before al dente, use a sauce loose enough for oven absorption and rest the finished bake for 10–15 minutes before cutting.
The oven is a second cooking stage. Pasta that enters fully done keeps absorbing liquid until its structure is gone.
A good bake looks slightly too saucy before it enters the oven; the pasta, cheese and resting time will tighten it.
Undercook with purpose
Start tasting well before the packet time and drain while the centre is distinctly firm but no longer raw. Oven-ready lasagne sheets follow different hydration rules, so use the packet and a tested sauce quantity.
Balance sauce and structure
A broad tube or short ridged shape survives mixing and catches sauce. Keep sauces cohesive but not dry, distribute ingredients evenly and cover the dish for part of the bake if edges are exposed.
Rest before serving
Ten to fifteen minutes lets bubbling sauce settle and starch finish absorbing liquid. The portions hold together and the centre is less likely to burn diners.
