Pasta School

How much pasta water should you save?

Reserve enough starchy cooking water for finishing, reheating and correcting sauce without hauling the whole pot to the table.

A heatproof jug keeps enough finishing water close to the pan and prevents the last useful splash going down the sink.
Short answer

Reserve at least 250 ml for four servings and 500 ml for a large family pot. You may use only a little, but the spare water is insurance.

Reserve enough starchy cooking water for finishing, reheating and correcting sauce without hauling the whole pot to the table.

The useful answer changes with sauce, shape and serving context, so the details below explain where the simple rule bends.

Concentration matters

Water from a smaller well-stirred pot is usually starchier than water from an enormous pot.

Add gradually

Cheese sauces need tablespoons. Tomato and one-pot sauces can use larger splashes while they reduce.

Keep in mind

  • Use a heatproof mug before draining.
  • Keep it until everyone has been served.
Use the lesson

Keep cooking.
