How to fix watery pasta sauce
Fix a watery tomato, cream or cheese pasta sauce using reduction, pasta water, emulsification and the right final toss.
Remove excess liquid through controlled reduction, then finish the pasta in the sauce so starch and agitation help it cling. Do not reach for flour first.
A watery sauce usually needs less water, not a new thickener. Reduce it before the pasta arrives, then use the final toss to bring sauce and pasta together.
Different sauces need different heat. Tomato tolerates a brisk simmer; cream and cheese need restraint.
Reduce before you combine
Lift out any already-cooked meat or vegetables if they risk overcooking. Simmer the liquid in a broad pan so steam can escape quickly.
Use pasta water carefully
Pasta water sounds like the wrong answer to a watery sauce. In small amounts during vigorous tossing, however, its starch helps emulsify fat and creates a clingier texture.
| Sauce | Best correction |
|---|---|
| Tomato | Brisk uncovered reduction |
| Cream | Gentle simmer, then Parmesan off heat |
| Cheese emulsion | Cool slightly and toss with fine cheese |
| Pesto | More pesto or cheese, no direct heat |
Keep in mind
- A broad pan reduces faster than a saucepan.
- Let baked pasta rest before deciding it is watery.
