How to Rescue Oversalted Pasta Sauce
Reduce excessive salt in pasta sauce by dilution, unsalted ingredients and portion adjustment without unreliable kitchen myths.
Dilute with an unsalted version of the sauce's main liquid or solids. If possible, cook extra unsalted pasta and combine portions. Do not expect a raw potato to remove salt selectively.
What went wrong?
Pasta water was salted heavily before salty cheese or cured meat entered.
Stock, bacon, olives or tinned fish were not tasted.
Reduction concentrated salt late.
Why it happened
Salt does not disappear during cooking. Evaporation removes water and makes the remaining salt more noticeable.
What you can do now
- Add unsalted tomato to tomato sauce.
- Use plain milk in a dairy sauce and warm gently.
- Increase the total batch with unsalted pasta or vegetables.
How to prevent it next time
- Season in stages.
- Use lighter pasta-water salt for cured meat and seafood dishes.
- Taste after reduction, not only before.
