Pasta doneness guide
Recognise undercooked, al dente and overcooked pasta by bite, cross-section and surface, then time the sauce finish correctly.
Al dente pasta is cooked through and resilient, with no chalky raw core. Drain earlier when it will finish in sauce or bake in the oven.
Colour alone is unreliable; brands and grains differ. Bite is the primary test because doneness is about hydrated structure.
Start tasting before the printed time and keep tasting at short intervals. The change from firm to soft can be surprisingly quick.
Undercooked
A hard or chalky centre resists rather than springs. The exterior may be tender while thick tubes and twists remain raw inside.
Al dente
The pasta is fully hydrated but offers a clean, elastic resistance. It bends without disintegrating and remains structured while tossed.
Overcooked
The surface becomes swollen or ragged, the bite loses definition and pieces tear easily. Sauce cannot restore the lost protein-starch structure.
