How to freeze pasta sauce

Freeze pasta sauces in useful portions, understand which sauces separate, and thaw and reheat without wasting texture.

Short answer

Cool sauce quickly, portion it in labelled airtight containers and freeze tomato, ragù and legume sauces for up to about three months. Freeze pesto without cheese where possible; expect cream sauces to split.

Sauce usually freezes better than assembled pasta. It takes less space, preserves pasta texture and turns a freezer container into dinner once a fresh pot boils.

Only freeze food that is still within its safe chilled window. A freezer does not repair several forgotten fridge days.

Tomato and ragù

Cool, portion and leave a little expansion room. Thaw overnight in the fridge or reheat gently from frozen in a covered saucepan.

Pesto

Freeze in small portions with a thin oil cover. Adding cheese after thawing often keeps the flavour fresher.

Cream and cheese sauces

They can split or become grainy. If freezing is unavoidable, reheat slowly while whisking in a little water or milk.
