How to cook pasta for a crowd
Plan pasta for 10 to 50 people with sensible portions, equipment, sauce timing, holding limits and safe serving guidance.
Choose a forgiving sauce, calculate portions before shopping, cook in manageable batches and finish close to serving. Do not boil 5 kg in a household pot or leave dressed pasta warm for hours.
Large-scale pasta is an equipment problem before it is a recipe problem. Count burners, pot capacity, colanders, oven space and serving vessels while the menu is still flexible.
Bakes and sturdy tomato sauces are easier to serve than carbonara or cacio e pepe, whose emulsions wait for nobody.
Work backwards from service
Have sauce hot and ready before the first batch of pasta drains. Assign one person to the pasta and one to finishing and service when numbers are large.
Batch without sacrificing texture
Keep batches small enough for the water to return to the boil. Undercook slightly, move straight into sauce and combine batches only when service is close.
Choose the right format
Short sturdy pasta is easier to stir, drain and portion than long strands. A properly sauced bake is even more forgiving when oven space permits.
