Homemade Chilli Sauce

A useful chilli sauce tastes of chillies, not only pain. Fruitiness, acidity, garlic, salt and a little sweetness give the heat somewhere to live. This is a refrigerated table sauce, not an untested canning project.

Vinegar

Acidity brightens flavour and supports refrigerated keeping, but does not automatically validate shelf-stable canning.

Garlic, salt and sugar

Traditional or reference method

Build it in order.

Bird's-eye chillies bring serious heat; jalapeño, serrano or mild red peppers bring body. Heat varies even within one packet.

    Simmer chopped chillies, red pepper, garlic, vinegar, water, salt and a small amount of sugar until soft.

Storage and freezing

Refrigerate promptly in a clean covered container and use within 2 weeks. Discard if mould, gas or an abnormal smell develops.

Freeze in small portions for up to 3 months.

Not required; stir before using.

Variations, labelled honestly

Use more mild pepper for a gentler sauce.

Add a small amount of smoked chilli for depth, not enough to make every dish taste like a fire pit.
