Why pasta goes wrong
Heat, water, starch, fat, protein and timing all have a job.
Most rescue decisions come down to changing one variable at a time. Heat can tighten protein, evaporation can concentrate sauce, and pasta starch only helps when it meets sauce at the right moment.
Some mistakes can be improved; others cannot be reversed. Food with an unsafe storage history is a separate issue: technique cannot make that history safe.
