San Marzano Tomatoes

Understand what San Marzano DOP means, how to read a tin, and when good whole peeled tomatoes are the more sensible South African buy.

What it is

San Marzano dell'Agro Sarnese-Nocerino is a protected Italian tomato designation tied to a defined Campanian area and production specification. San Marzano-style wording is not the same claim.

How it tastes

Balanced sweetness and acidity with dense flesh when the fruit and processing are good. A famous name cannot rescue damaged or poorly packed tomatoes.

Texture

Elongated plum tomatoes with relatively meaty flesh. Whole peeled tins let the cook choose between hand-crushed texture and a smooth blend.

Production and technique

How it is made and why that matters.

Protected fruit is grown, harvested and packed under the DOP rules. Genuine tins carry the complete designation and European protection marks.

For sauce, crush by hand and simmer only as long as the chosen dish requires.

Useful in tomato sauces where the fruit remains central, including pomodoro and amatriciana.

They are not compulsory for every Italian sauce. Excellent ordinary whole peeled tomatoes beat an expensive but tired tin.

Good local or imported whole peeled plum tomatoes are a sensible substitute for everyday cooking.
